Nut Free Cherry Parfait

  • 250g fresh cherries
  • ½ teaspoon caster sugar
  • ½ teaspoon balsamic vinegar
  • ½ cup (50g) nut-free muesli
  • ½ cup (150g) Greek yoghurt
  1. Remove stems and pit cherries
  2. Add cherries, caster sugar and balsamic vinegar to a saucepan and cook on a medium-low heat for 5 minutes. Allow to cool for 5 minutes
  3. Using a tablespoon measure as a guide, layer yoghurt, cooked cherries and muesli in two parfait glasses
  4. Top with fresh cherries and serve immediately
You can make these ahead of time and keep them in the fridge. They will become more like a bircher muesli this way. If you make them in a container with a lid, they also become a great portable breakfast or snack.
